1 garlic clove, diced 1 medium onion, diced
2 cups fresh spinach 1 poblano or anaheim pepper; roasted, peeled, and diced
2 cups shredded monterey jack cheese 2 tbsp. olive oil
8 oz. roasted rasberry chipotle sauce salt and pepper to taste
