1 cup part-skim ricotta cheese 2 cups shredded Italian blend cheese
1 10-oz. package frozen chopped spinach, thawed and squeezed dry 2 garlic cloves
1 tbsp. olive oil 1 lb. pizza dough
1 egg white, lightly beaten 1/4 cup grated parmesan cheese
